Dulce de Leche Chocolate Cheesecake Bars by Shweet!

Shortbread Cookie Base

¼ cup sugar

¾ cups flour

½ tsp vanilla

1/8 tsp vanilla

1 stick unsalted butter, cold and cut into cubes
Filling

1 8oz package cream cheese, room temperature

1 14oz can sweetened condensed milk

8oz semi-sweet chocolate chips, melted

2 large eggs, room temperature
Topping
-
Dulce de leche caramel = [1 14 oz can of sweetened condensed milk] (recipe follows)

1 stick unsalted butter, room temperature

1 tsp vanilla
-
pinch of salt
-
¼ cup finely chopped almonds, for garnish (optional)
Directions:

Preheat oven to 350 degrees.

Butter a 8 in square baking pan and line with parchment paper.

Cookie base: Combine sugar, flour, salt in a bowl. Add butter and vanilla and cut into dry ingredients using 2 forks or a pastry blender until the mixture resembles coarse crumbs. Form into a ball and press into prepared baking pan. Bake for 10-15 min, or until lightly golden. Set aside and let cool.

Filling: Blend together cream cheese and condensed milk using stand mixer or handheld mixer until combined. Add melted chocolate until combined. Add eggs one at a time until smooth. Pour mixture over cooled cookie crust in baking pan. Bake for 30 minutes, or until just set. Set aside and let cool for 30 minutes. Place in refrigerator and chill for another 30 min to an hour.

Dulce de Leche: Pour 1 can of sweetened condensed milk into top of double boiler or a heatproof bowl over a pot of simmering water and cover. Cook, stirring every 15 minutes until thick and caramel in color, about 2-3 hours. Let cool.

Topping: Cream the butter with a stand mixer or handheld mixer. Add the dulce de leche and blend until smooth. Add vanilla and salt until combined. Pour topping over cooled cheesecake and top with almonds.
7. Cut into squares and enjoy!
